Green Bean Casserole

Ingredients
Crispy Onion Topping
- Avocado oil, for frying
- 1 cup cassava flour
- 1 tbsp arrowroot flour
- Salt, to taste
- 1 large onion, thinly sliced into rings
Casserole
- 1 lb fresh green beans, trimmed
- 2 jars Primal Kitchen Cashew Kale Pesto Alfredo Sauce
- Crispy onion topping (from above)
Directions
Crispy Onion Topping
- Heat 1–2 inches of avocado oil in a heavy-bottomed pot or skillet over medium-high heat.
- Whisk together cassava flour, arrowroot flour, and salt in a shallow bowl.
- Toss onion rings in the flour mixture to coat.
- Fry in batches until golden and crispy, about 3–4 minutes. Drain on a paper towel-lined plate.
Casserole
- Preheat oven to 350°F.
- Blanch green beans in boiling salted water for 3–4 minutes; drain.
- Combine green beans and both jars of Cashew Kale Pesto Alfredo Sauce in a 9x13 baking dish. Mix well.
- Bake uncovered for 25–30 minutes, until bubbling.
- Top with crispy onion rings and bake an additional 5–10 minutes until topping is set.
