Green Bean Casserole

Ingredients

Crispy Onion Topping

  • Avocado oil, for frying
  • 1 cup cassava flour
  • 1 tbsp arrowroot flour
  • Salt, to taste
  • 1 large onion, thinly sliced into rings

Casserole

  • 1 lb fresh green beans, trimmed
  • 2 jars Primal Kitchen Cashew Kale Pesto Alfredo Sauce
  • Crispy onion topping (from above)

Directions

Crispy Onion Topping

  1. Heat 1–2 inches of avocado oil in a heavy-bottomed pot or skillet over medium-high heat.
  2. Whisk together cassava flour, arrowroot flour, and salt in a shallow bowl.
  3. Toss onion rings in the flour mixture to coat.
  4. Fry in batches until golden and crispy, about 3–4 minutes. Drain on a paper towel-lined plate.

Casserole

  1. Preheat oven to 350°F.
  2. Blanch green beans in boiling salted water for 3–4 minutes; drain.
  3. Combine green beans and both jars of Cashew Kale Pesto Alfredo Sauce in a 9x13 baking dish. Mix well.
  4. Bake uncovered for 25–30 minutes, until bubbling.
  5. Top with crispy onion rings and bake an additional 5–10 minutes until topping is set.
