Cauliflower Au Gratin

Ingredients
- 1 large head cauliflower, cut into florets
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
Cheese Sauce
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- ¼ tsp ground nutmeg
- Salt and pepper, to taste
- 1½ cups shredded Gruyère cheese, divided
Topping
- ¼ cup panko breadcrumbs
Directions
- Preheat oven to 425°F.
- Toss cauliflower florets with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
- Roast for 20 minutes, until lightly golden. Reduce oven to 375°F.
- Meanwhile, make the cheese sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook 1–2 minutes. Gradually whisk in milk. Cook, stirring constantly, until thickened, about 5 minutes. Season with nutmeg, salt, and pepper. Remove from heat and stir in 1 cup of the Gruyère.
- Arrange roasted cauliflower in an 8x11 baking dish. Pour cheese sauce over the top.
- Sprinkle remaining ½ cup Gruyère and panko breadcrumbs over the top.
- Bake at 375°F for 25–30 minutes, until bubbly and golden brown.
