Cauliflower Au Gratin

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Cheese Sauce

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • ¼ tsp ground nutmeg
  • Salt and pepper, to taste
  • 1½ cups shredded Gruyère cheese, divided

Topping

  • ¼ cup panko breadcrumbs

Directions

  1. Preheat oven to 425°F.
  2. Toss cauliflower florets with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20 minutes, until lightly golden. Reduce oven to 375°F.
  4. Meanwhile, make the cheese sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook 1–2 minutes. Gradually whisk in milk. Cook, stirring constantly, until thickened, about 5 minutes. Season with nutmeg, salt, and pepper. Remove from heat and stir in 1 cup of the Gruyère.
  5. Arrange roasted cauliflower in an 8x11 baking dish. Pour cheese sauce over the top.
  6. Sprinkle remaining ½ cup Gruyère and panko breadcrumbs over the top.
  7. Bake at 375°F for 25–30 minutes, until bubbly and golden brown.
