White Chili with Ground Turkey

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1.5 lbs ground turkey
  • 2 (4 oz) cans green chili peppers, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cinnamon
  • ground cayenne pepper, to taste
  • ground white pepper, to taste
  • 3 (15 oz) cans cannellini beans
  • 5 cups chicken broth
  • 2 cups shredded Monterey Jack cheese

Directions

  1. In a large pot over medium heat, combine the onion, garlic, and the ground turkey. Sauté for 10 minutes, or until the turkey is well browned.
  2. Add the chili peppers, cumin, oregano, cinnamon, cayenne pepper, and white pepper and sauté for 5 more minutes.
  3. Add two cans of the beans and the chicken broth to the pot.
  4. Take the third can of beans and puree in a blender or food processor.
  5. Add the puree and cheese to the pot. Stir well and simmer for 10 minutes to allow the cheese to melt.
