Thai Turkey Meal Prep Lettuce Wraps

Ingredients
Sauce
- ¼ cup natural peanut butter
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp water
- 1 tsp sesame oil
- 1 tbsp lime juice
Filling
- 1 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp Thai red curry paste
- 1 lb lean ground turkey
- 1 cup shredded carrots
To Serve
- Romaine or butter lettuce leaves
- Chopped green onions and peanuts, optional garnish
Directions
- Make sauce: Combine all sauce ingredients in a jar or shaker and blend until smooth.
- Cook filling: Heat oil in a skillet over medium heat. Sauté onion, garlic, and curry paste for 2–3 minutes. Add ground turkey and cook 5–7 minutes until fully cooked through. Stir in carrots.
- Combine: Stir in peanut sauce until evenly coated. Let cool slightly.
- Assemble: Spoon turkey filling into lettuce leaves. Top with green onions and peanuts if desired. Serve immediately.
Storage & Meal Prep
- Keep filling separate from lettuce.
- Refrigerate filling in an airtight container up to 4 days, or freeze up to 3 months.
- Reheat until piping hot before serving.
