Thai Turkey Meal Prep Lettuce Wraps

Ingredients

Sauce

  • ¼ cup natural peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp water
  • 1 tsp sesame oil
  • 1 tbsp lime juice

Filling

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 lb lean ground turkey
  • 1 cup shredded carrots

To Serve

  • Romaine or butter lettuce leaves
  • Chopped green onions and peanuts, optional garnish

Directions

  1. Make sauce: Combine all sauce ingredients in a jar or shaker and blend until smooth.
  2. Cook filling: Heat oil in a skillet over medium heat. Sauté onion, garlic, and curry paste for 2–3 minutes. Add ground turkey and cook 5–7 minutes until fully cooked through. Stir in carrots.
  3. Combine: Stir in peanut sauce until evenly coated. Let cool slightly.
  4. Assemble: Spoon turkey filling into lettuce leaves. Top with green onions and peanuts if desired. Serve immediately.

Storage & Meal Prep

  • Keep filling separate from lettuce.
  • Refrigerate filling in an airtight container up to 4 days, or freeze up to 3 months.
  • Reheat until piping hot before serving.
