Best Yet Banana Mini Muffins

Ingredients
- Cooking spray
- 1½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3 bananas, mashed
- ¾ cup white sugar
- ⅓ cup melted butter
- 1 egg, beaten
Directions
- Preheat oven to 375°F. Grease 2 mini muffin tins with cooking spray.
- Combine flour, baking powder, and baking soda in a bowl.
- In a separate bowl, blend mashed bananas, sugar, butter, and egg together. Add to flour mixture and stir well to combine.
- Scoop batter into prepared muffin cups, filling each ⅔ full.
- Bake about 15 minutes, until tops spring back when lightly pressed.
- Cool in tins for 5 minutes, then transfer to a wire rack to cool completely.
