Best Yet Banana Mini Muffins

Ingredients

  • Cooking spray
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 bananas, mashed
  • ¾ cup white sugar
  • ⅓ cup melted butter
  • 1 egg, beaten

Directions

  1. Preheat oven to 375°F. Grease 2 mini muffin tins with cooking spray.
  2. Combine flour, baking powder, and baking soda in a bowl.
  3. In a separate bowl, blend mashed bananas, sugar, butter, and egg together. Add to flour mixture and stir well to combine.
  4. Scoop batter into prepared muffin cups, filling each ⅔ full.
  5. Bake about 15 minutes, until tops spring back when lightly pressed.
  6. Cool in tins for 5 minutes, then transfer to a wire rack to cool completely.
